Corporate Beverage Director

Since 2003, SA Hospitality Group has expanded to a selective group of iconic New York neighborhoods with its three brands: Sant Ambroeus, Casa Lever, Felice with 24 restaurant locations in Manhattan, Southampton, NY, East Hampton, NY, Aspen, CO, Milan, Italy, and Palm Beach, FL.
Position Purpose: this person will be responsible for directing and managing beverage service to ensure guest satisfaction while maintaining appropriate beverage costs by managing purchasing and inventory
Key Responsibilities/Accountabilities:
Logistics
- Responsible for logistics and efficiency in all locations – monitor which beverage offerings work and which don’t. Be flexible to adjust to achieve expected goals e.g., increase wine sales, cellar organization, re-stocking system, deliveries, inventories, etc.
- Responsible for assisting in the creation of new wine offerings in all locations based on demand and guest’s feedback and/or most current trends and seasons (suggestions for new wines by the glass, new labels, and/or other more profitable ideas, etc.)
- Responsible for on-going wine training of staff and materials generation in all locations
- Responsible for monitoring of beverage deliveries – spot checking BIN # assignment, proper storage organization and control
- Maintain the safety and security of all employees, guests and company assets by developing systems and procedures that comply with our Safety Manuals
- Responsible to create a culture of wine with staff and management that improves the units wine perception.
Product Presentation
- Monitor and make sure the quality of all wine beverages is at its highest in all locations (– spot check and be present during the hours of operation)
- Assist in maintaining control over all beverage offerings in all locations with VP of Operations.
- Train and guide staff on proper wine service, bottle presentation - decanting and pouring making sure the correct verbiage is used at all times – organize weekly trainings and tastings, make sure there is a wine/beverage class scheduled and one at least once a month for each location
- Communicate all wine changes to managers in locations via email
- Monitor the quality and par levels of glassware with the assistance of managers in each location
- Mentor unit managers in the culture of wine, staff education and pre shift notes.
- Work at individual units during lunch and dinner shifts helping to reinforce all of the above.
- Travel to locations outside of New York City to set up for seasons and to make sure training programs are being implemented correctly.
Financial
- Work with Accubar to have maximum control over inventories in all locations
- Maximize financial performance and profit – suggest promotions and bring revenue increase ideas, train staff on up selling, build relationships and network within the city to expose our beverage program and bring potential additional revenue
- Achieve budgeted beverage cost in all locations
- Enforce federal, state, and local laws including alcohol consumption
- Work closely with the office and managers in all locations to make sure all received and signed invoices correspond with original orders and actual deliveries
- Follow up on payment of invoices if necessary.
Administrative
- Ensure accuracy of wines on all beverage menus, wine lists and POS postings
- Monitor sales and find discrepancies using internal systems such as Avero
- Investigate any variances as directed by the corporate beverage team
- Assist in month end inventory by spot checking unit counts.
- Assist in creating agenda for monthly beverage conference call.
Self-Development
It is understood that as Corporate Beverage Director you are responsible to maintain current knowledge of the world of wines. You will be required to continually develop this knowledge on your own time and stay on top of current industry trends. Your progress in education will be evaluated on an ongoing basis. Likewise, the company will assist in any way possible with any educational goals that relate to your (with prior management approval).
Minimal Essential Requirements:
- Must be able to travel within US and International markets – up to 20%
- Experience in a multi-unit or regional role
- The ability to work as part of a team, and personal cleanliness.
- Very basic food handling, preparation, and cleaning skills are welcomed.
- Time management and ability to work under pressure to manage high volume of production.
- Active listening and learning skills.
- Reading and speaking comprehension skills.
- Discipline to follow set standards.
- Ability to lift up to 25lbs.
