LICENSE/CERTIFICATION: Valid Driver’s License and DMV Driving History Printout (no more than 30 days old).
JOB SUMMARY:
Responsible for maintaining and repairing all commercial kitchen equipment, including ovens, refrigerators, grills, dishwashers, and other appliances, by performing preventative maintenance, troubleshooting malfunctions, ordering necessary parts, and ensuring the equipment operates safely and efficiently to meet food service standards within the kitchens’ operations for all Mesquite Gaming properties.
JOB QUALIFICATIONS:
Minimum three (3) years experience in repairing commercial kitchen equipment required. Must be able to follow written and oral instructions. Must be able to read, write, and communicate verbally in English. Must be able to follow written and verbal directions and work independently. Must have effective communication, interpersonal and organizational skills. Must be able to read and understand blueprints.
ESSENTIAL JOB FUNCTIONS:
- Regularly inspect and service all kitchen equipment to identify potential issues and perform preventative maintenance tasks like cleaning, lubrication, and calibration.
- Maintain an orderly schedule of preventive maintenance.
- Diagnose malfunctions on kitchen equipment, including electrical issues, mechanical breakdowns, and refrigeration problems, and perform necessary repairs using appropriate tools and parts.
- Identify required replacement parts, order them from vendors, and maintain inventory of common spare parts.
- Respond promptly to equipment breakdowns during service hours to minimize downtime and disruption to food operations.
- Adhere to all safety protocols and procedures when working with kitchen equipment, including proper handling of chemicals and electrical safety.
- Completing paperwork, as necessary.
- Follow specifications, blueprints, manuals and schematic drawings when necessary.
- Strictly adhere to all departmental, company, and governmental rules, regulations and policies with specific attention to safety and environmental concerns.
- Maintain a constant awareness of safety problems and report unsafe conditions and exposure of shift supervisor.
- Other job-related duties as assigned and instructed by management.

PHYSICAL DEMANDS:
The work requires physical exertion such as long periods of standing; walking over rough, uneven, or rocky surfaces; recurring bending, crouching, stooping, stretching, reaching, or similar activities; recurring lifting of moderately heavy items. The work may require specific, but common, physical characteristics and abilities such as above-average agility and dexterity. Ability to lift, push and pull up to 50 lbs.
WORK ENVIRONMENT:
Work in undesirable conditions including extreme heat (exceeding 120 degrees) cold, wind and rain. The work involves moderate risks or discomforts requiring special safety precautions, e.g., working around moving parts, carts, or machines, or with irritant chemicals. Employees may be required to use protective clothing or gear such as masks, glasses, hard hats, gloves and boots.Use of safe work practices with office equipment, avoidance of trips and falls, and observance of fire regulations and traffic signals. The work environment involves exposure to secondhand smoke in a casino. This is a 24 hour/7 day a week work environment with varying shifts including weekends and holidays.
