We have an incredible opportunity for a dynamic Chef to join our growing Des Plaines Team!

Responsibilities: 

  • Supervise the daily production of fresh, high-quality foods served to hundreds of international airline guests, ensuring supply-chain systems operate efficiently.
  • Control timing of the food production flow and oversee processing to avoid delays or lapses in service.
  • Oversee and manage all kitchen operations, ensuring seamless daily execution of tasks and adherence to deadlines.
  • Supervise and mentor a diverse kitchen team, including junior chefs and kitchen staff, fostering a collaborative and efficient work environment.
  • Develop and implement training programs for team members, ensuring skill development and consistent performance.
  • Maintain high culinary standards, including quality, presentation, portion control, and cost efficiency, across all kitchen operations.
  • Create and refine menus, incorporating creativity, seasonal ingredients, and cost-effective solutions to enhance offerings.
  • Monitor ingredient quality, participate in food tastings, and ensure adherence to standardized recipes for consistent output.
  • Address and resolve kitchen challenges promptly, ensuring operations remain smooth and efficient.
  • Collaborate with procurement to manage inventory levels, ensuring timely replenishment of ingredients and supplies.
  • Uphold compliance with HACCP, OSHA, FDA regulations, and company-specific food safety protocols.
  • Ensure cleanliness, organization, and proper maintenance of kitchen facilities in line with food safety guidelines.
  • Develop schedules and allocate resources to align with business needs, optimizing team availability and productivity.
  • Stay updated on culinary trends and innovations, incorporating best practices to elevate kitchen operations.
  • Partner with the Executive Chef on catering proposals, cost analysis, and strategic planning to drive business growth.
  • Perform additional duties as required, ensuring the kitchen operates to the highest standards.

Qualifications:

  • Minimum of 5 years of culinary experience in a high-volume, full-service kitchen environment.
  • In-depth culinary expertise, including knowledge of terms, techniques, and industry best practices.
  • Strong organizational skills with the ability to prioritize tasks and manage time effectively.
  • Proven ability to perform in high-pressure environments, handling substantial workloads and extended standing periods.
  • Proficiency in developing creative and cost-effective menu solutions.
  • Exceptional leadership and communication skills, with experience managing diverse teams.
  • Thorough knowledge of HACCP, OSHA, FDA regulations, and food safety standards.
  • Proficient in Microsoft Office Suite (Word, Excel, Outlook).
  • Bachelor’s degree in Culinary Arts or a related field is preferred; relevant certifications are a plus.
  • Flexible availability, including readiness to work evenings, weekends, and holidays as needed.
