The Production Technician I - Rinse & Smoke is responsible for overseeing the entire smoking process and ensuring that each piece of fish is smoked in accordance with Acme Smoked Fish standards.
What You Will Do At Acme:
- Performs work as assigned by production supervisor and/or group leader.
- Prepares machine per batch card recipe, add green tea if applicable.
- Transfers trolleys from curing area according to batch time.
- Places screens of cured fillets onto rinsing machine.
- Inspects product for defects, bruises, blemishes, or damage.
- Transfers rinsed trolleys into ovens for smoking.
- Monitors oven temps and smoke in room.
- Records information in Seasoft, oven monitors and other logs.
- Assist in all aspects of the smoking operation.
- Load / unload trolleys with fish and move trolleys from pre-smoke & post-smoke holding areas.
- Add woodchips into smoke generator chambers as necessary.
- Observe and monitor controls to regulate temperature, humidity and density or smoke.
- Fulfill all written documentation necessary.
- Ensure all established procedures are followed with no deviation.
- Create and support efforts to maximize production while assisting in identifying process improvements.
- Clean smoke generators weekly.
- Notifies supervisor of any mechanical or product issues.
- Maintains a clean and safe work area.
- Follows EHS, GMP, HR and other company policies.
- Demonstrates ability to meet production standards on specific assignments within a reasonable time.
- Reads Bulletin Boards, participates in department huddles and attends required meetings/trainings to learn important company information.
- Other related duties as assigned.
About You
Your Education & Experience:
- High School diploma or equivalent required.
- 1-3 years in manufacturing/ smoking setting helpful but not required.
Your Skills & Abilities:
- Must be able to handle minor repairs of smoking equipment and troubleshoot if need arises.
- Reliable and detail oriented; pay close attention to the fish color and texture.
- Hands-on and dependable individual with ability to work.
- Ability to be flexible and communicate well with others.
- Commitment to the objectives of the organization.
- Cooking and food industry experience desired.
- Must be able to speak and communicate in English.
- Experience in Smoked fish.
- Seafood HACCP certified.
- Completion of training programs as assigned and/or required including standard of work.
Physical Requirements:
- The ability to bend, stretch, twist, or reach out with the body, arms or legs to perform job tasks.
- Must be able to reach above and below shoulder height to move product. This includes the ability to move throughout all areas of the facility.
- Ability to climb stairs
- The ability to lift, push, pull, or carry objects using hands, arms, back, abdominal muscles, shoulders, legs, or a combination of these muscle groups.
- The ability to wear all necessary personal protective equipment to perform job duties.
- The ability to work in cold (32 to 45°F) and wet environment
- Must be able to lift up to 50 pounds at times.

- Follow mandated OSHA regulations.
- Report all incidents including near misses immediately.
