Position Summary

The Area Chef exemplifies superior guest service, high quality standards, and a focus on culinary excellence. Area Chefs train and develop the kitchen teams within their area through mentoring and driving results on food quality, HOH labor, kitchen safety, and food costs. Assists in developing kitchen productivity standards and metrics to improve culinary operations performance, creating and modifying procedures to support kitchen equipment, recipes, and prep standards. Ensures integrity of food recipes and execution is upheld in the field.

Principal Accountabilities:

Process 

  • Lead area culinary calls/EC calls. 
  • Assess HOH procedures to determine optimization. 
  • Monitors and continually audits current ingredient SKU’s to make innovative improvements and to create efficiencies. 
  • Monitors Zenput form completion from Executive Chefs and holds teams accountable to completion and correction. 

People

  • Mentors and develops our Chefs. 
  • Develops succession plans and action plans for Chef growth within their Area along with the People Business Partners. 
  • Trains Executive Chefs on proper procedures including inventory, prep reports, Ecosure/Safety, declining budgets, ordering to forecast, scheduling teams to forecast with the General Manager. 

Operations

  • Guest Sentiment - Area Follow-Up related to food reviews. 
  • Evaluates top ten high Actual vs Theoretical SKUs within the entire Area and establishes a plan of action for the restaurants. 
  • Support R&M rollout initiatives- Area (this is not managing the overall R&M) 
  • Eco sure / Ecolab Follow up Area as needed. 
  • Assists in creating and facilitation of new HOH program rollouts and initiatives.

Area NRO support

  • Assists the training team with programs to support new menu rollouts, development of our chefs, and other kitchen initiatives within the brand. 
  • Conducts facility walks and line checks with Chef teams. 
  • Verifies and manages HOH schedules and overtime for kitchen teams in their Area. 

Innovation

  • Support in implementation of new revenue streams involving food.
  • Provide the feedback loop from operators to the innovation team on new menu items and new initiatives. 
  • Facilitates and institutes best practice sharing between restaurants with guidance and direction from Regional Chefs and Sr Vice President of Culinary

Qualifications:

  • Displays strong knowledge of recipes, line builds, prep specifications and ingredients. 
  • Experience in managing multi-unit restaurants, hotels, or other culinary operations as an above the restaurant leadership position. 
  • Exemplifies positive culture, ethics and is the ambassador of the TFK brand. 
  • Five years’ experience as an executive chef in a high volume, upscale environment. 
  • Must possess exceptional written and oral communication skills, strong interpersonal and motivational skills, and the ability to work well under pressure. 
  • Attention to detail, well organized and able to multi-task. High level of personal initiative, action and results oriented. 
  • Strong working knowledge with Microsoft Office, Outlook, Word and Excel

Travel Requirements: 80%
