Band 3

F&B Manager, Mauna Kea Market 

Primary Responsibilities: Responsible for ensuring guest satisfaction by providing high-quality retail experiences. Ensures that the product, service and ambiance meet or exceed resort and division standards with a continuous improvement mindset. Contributes to the departments’ financial performance by creating revenue opportunites, and managing labor and controllable expenses to the budget and forecast. Provides a safe and healthy work environment for team members and leaders.

Essential Duties:

1. Responsible for ensuring that all products served, service levels, conduct, and maintenance of the Market meet or exceed the standards of the food and beverage operations

2. Drive department GSS scores in the attributes of Service, Food Quality, and Overall Satisfaction to meet established goals

3. Follow resort policies, procedures and terms and conditions of the CBA

4. Manage daily floor operations, ensuring efficient and timely service, connecting with guests, and assisting team members as needed

5. Train and ensure compliance with established procedures and standards of operation. Create SOPs for additional standards necessary to improve the operation

6. Maintain sufficient stock in the Market by reviewing sales data, establishing pars, and timely submission of requisitions and vendor orders

7. Create and maintain attractive merchandise displays while ensuring shelves are kept full and orderly

8. Make regular changes to Market offerings based on sales data and guest feedback

9. Address and resolve guest issues

10. Knowledgeable in all menu items including beverage and retail non-food items

11. Ensure that special requests and VIP guests are serviced properly

12. Ensure compliance with state and county Department of Health regulations

13. Ensure compliance with state and county Department of Liquor Control regulations

14. Hire, train, supervise, evaluate, and counsel staff

15. Write weekly department work schedules in line with CBA and established staffing guidelines

16. Review, approve and verify department payroll

17. Prepare storeroom requisitions

18. Ensure all supplies, tools, and equipment are available for operation of the restaurant and maintained properly. Assist in preparing annual operating and CIP budgets for the Market

19. Make recommendations to menu or beverage items to remain competitive in the community

20. Regularly gather ideas for marketing and promotion, and review with ADFB/DFB

21. Respond and resolve guest and employee concerns in a timely manner

22. Ensure safety training and standards are maintained

23. Perform other related duties as assigned or required

 

Other Duties:

1. Conduct regular department meetings

2. Attend resort management meetings

3. Maintain department communication boards

4. Assist staff with service when needed

5. Relieve in other food and beverage positions as needed

 

 

 

Working Conditions:

· Normal office conditions

· Indoor and outdoor hotel restaurants or venues

· Restaurant kitchen, normal kitchen noises, loud voices, loud machines

 

Work Hours:

· Must be able to work schedule determined by the Director of Food and Beverage/Asst Director of Food & Beverage

· Must be able to work irregular hours

· Must be able to work a minimum of 50 hours per week

 

Equipment Use:

· Proficient in the use of a computer and with the resort’s office software, web-based platforms, and other required applications

· Ability to use the telephone and other office equipment

· Ability to use the company’s point of sale system

 

Mental and Physical Demands:

· Ability to prioritize and organize workload to ensure deadlines are met

· Able to manage stressful and challenging situations

· Able to stand and walk during most of shift

· Able to sit at a desk to do administrative duties

· Lift and carry up to 25 lbs

· Push and pull up to 50 lbs

 

Communication Demands:

· Effectively communicate in both verbal and written form to team members, leaders, guests, and vendors

· Ability to write and articulate procedures, policies, and department updates

 

Minimum Qualification Requirements:

· Minimum 5 years related experience

· Dept. of Health TB clearance

· Liquor Commission Manager’s Card required, or acquired within 30 days after hire
