Kitchen Manager
The Kitchen Manager at Washington National Golf Club is responsible for selecting and developing recipes that meet corporate guidelines, standardizing plating guidelines to ensure consistent quality, establishing and upholding quality and portion standards, planning and pricing menus. This position is also responsible for ensuring proper equipment operation/maintenance and ensuring proper safety and sanitation in the kitchen. In addition, the Kitchen Manager is responsible for overseeing all kitchen operations; including supervising and coordinating all related culinary activities while managing labor and food costs to ensure budgetary goals are achieved.
COMPENSATION DETAILS:
- Compensation: $28.85 - $33.65 per hour depending on experience (appx. $60,000 - $70,000 per year)
- Eligible for Overtime
- Eligible for Annual Bonus equal to 10% of base annual salary ($6,000 - $7,000)*
- Internal Growth Potential at 8 properties and Home Office
*Annual bonus eligibility based on meeting company goals.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Must be proactive in developing innovative ideas to facilitate the continual delivery of exceptional quality products and profit contributions to the company.
- Ensure Kitchen is always held to the highest health and cleanliness standards.
- Ensure guest survey scores for food quality and consistency are above 4.5.
- Encourage, mentor, coach, train and develop team members to ensure their maximum value
- Lead by example. Establish and embody the benchmark of performance to the department in the areas of motivation, sense of ownership, and dedication to quality of product.
- Understand and value individual growth and development as well as formulate strategies for growth and development of team members.
- Complete menu development, cost controls, purchasing and inventory responsibilities in line with the needs of the business.
- Manage monthly expenses to the budget, minimizing expenses and overtime.
- Schedule to proper business levels and within budgeted staffing guides.
QUALIFICATIONS, EDUCATION AND/OR EXPERIENCE:
- Positive and proactive supervisory, leadership, management and coaching skills.
- Possess good communication skills, both written and verbal.
- Ability to multi-task while remaining focused on the key objectives of the position.
- Must be comfortable and willing to “roll up sleeves” and lead by positive example.
- Successful completion of Certified Chef de Cuisine or higher from the American Culinary Federation, or successful completion of a nationally ranked Culinary or Vocational School; or the equivalent combination of education experience.
- ServSafe certified.
- Must have worked in both restaurant and event catering environments at a Senior Sous level or above.
- Minimum of 3 years as an Executive Chef or Kitchen Manager in a multi-outlet facility.
